Jakub Gorgon immigrated to the US in 1982 and says while other kids were watching cartoons, he was enthralled by cable TV’s cooking shows (and soon burned all his parents’ pots and pans!). Today, he’s reminded of his grandmother in Poland whenever he’s working with bread or pasta dough because he was always right in the kitchen cooking with her. He relies on local, seasonal ingredients and loves offering plant-forward options. “The airmen at the base travel the world and try different foods wherever they’re stationed,” he says. Chef Jakub loves seeing guests enjoy his dishes inspired by Middle Eastern, Thai, Italian and Tex-Mex cuisines.
