Handhelds have enduring appeal because of their versatility and convenience, so it’s no wonder that Chef Saipin and Chef Juan dreamed up a trendy new wrap for a recent culinary competition. They combined chicken thighs, marinated in hoisin, garlic and harissa, with julienned red peppers, carrots and cucumbers, in a lightly toasted tortilla. It’s served with a fresh plum and guava aioli for dipping and a light, vibrant side salad featuring shredded root vegetables over spring mix. This wrap has so much creative flair and flavor that it earned first-place honors.
