Lauren Scorzetti Signature Chef

Sodexo Chef Lauren Scorzetti’s career has been filled with many opportunities for creativity, advancement and building of relationships with the client, residents and purveyors.

She began her Sodexo career as a Chef Manager for Moravian Manor. In that role, she was given the opportunity to get to know the residents on a personal level, along with their food likes and dislikes. When she was promoted to Executive Chef, the relationships and trust that were built greatly assisted in her new role.

Having the confidence of the residents allowed Chef Scorzetti to introduce newer food ideas, including cultural foods, locally sourced foods and various preparation methods. In order to get a better grasp of what the residents wanted to see included on their menus, Chef Scorzetti was instrumental in the establishment of a food council, which has a rotation of approximately 10 residents per quarter. This council assists with the consumer’s perspective from the service to the food.

She has been in the position of sharing knowledge with members of her team, such as exposing them to scratch-baking bread, preparing fresh pastries and introducing them to newer and more efficient ways of performing their jobs.

The annual Lititz Fire and Ice festival 2016 featured her award-winning chili recipe. Participants included local restaurants, independent people and other Sodexo units. The thought behind the creation of this recipe was that it would please both the palates of the residents and of the general public. The base of the chili is mild with emphasis on the toasting of the spices. Proper layering of flavors, and the slow cooking of the ingredients made for a very flavorful and bold chili. An option was offered to kick up the chili with a fresh spicy Pico de Gallo and then cooled down with sour cream and shredded cheese.
