Chef Caleb Timp says his favorite part of creating a dish is working through the ingredients in his head, then making changes depending on how the ingredients interact with one another. While he’s had many successful dishes (and plenty of failed ones, he says), he finds it extremely satisfying when he creates something entirely new and different.
