“I realized that I wanted to be a chef at age 8 when I made French toast for my brother,” says Chef Joel Hirsch. From that moment on, Joel says he was always in the kitchen and would go to work with his chef-turned-general manager uncle to watch him work. Finding inspiration in Asian and Latin cooking, he tries to keep his culinary creations as simple as possible to let the natural flavors shine through.
