Karl Mace Signature Chef

Growing up on the Maine coast with both an Irish and a Swedish grandmother, he was exposed to amazing food early on. He says he’s loved barbecue from a young age, and his pulled pork sandwich celebrates flavors and ingredients from the Georgia lowcountry, including Georgia’s official state fruit—the peach. Chef Karl says the secret for perfect pork barbecue is a good rub and “slow and low” cooking. Don’t rush the process, he says. “Great pork takes time.”
