In 2003, Chef Dan Cruickshank was working as an apprentice commis chef in the award winning Glenview Hotel in Co Wicklow. It was there that he witnessed the fast-paced, busy rush of the summer wedding season in a four-star hotel. It was then that he realized there is no turning back. During this time, time Chef Cruickshank was studying Professional Cookery in Cathal Brugha Street, Dublin. After Dublin, he travelled to Australia and South East Asia where he worked in several restaurants gaining knowledge and skills. After his experiences abroad, he returned to Dublin. In 2013, he was nominated for Best Chef in Leinster by the Food & Wine magazine/ Louis Latour Restaurant of the Year Awards. In 2015, he joined Sodexo, and in 2016 he became head chef of a large school in Dublin.
