Chef Karin Mann grew up in a restaurant family in Sweden where local and seasonal were always top priority. She describes her style as a little eclectic, melding different cuisines together. She likes using lots of vegetables and rich seasonings, and her Innovation Challenge dish has that creative mix—with its Cajun tilapia and kiwi-and-red onion salsa.
