With a lifelong interest in healthy food, Chef Roberta Lowe’s goal is to create flavor-packed, healthy and nutritious foods for Sodexo guests. With more than 20% of her café guests identifying as pescatarian, vegetarian and vegan, her menus include many vegetable, grain and legume dishes. Chef Roberta loves to include herbs and spices from around the world because each offers a unique flavor that can turn one main ingredient into many dishes. She finds that guests are asking for more plant-based options, so she makes sure that her dishes have great visual appeal. After all, she says, “We eat with our eyes first.”
