Steve Schiele found his passion for cooking early in life. From his grandfather’s bakery on Chicago’s North Side to his dishwashing job at thirteen, he knew all along that he wanted to be a chef. He focuses on Midwestern flavors and finds inspiration in healthy, nutritious and seasonal foods. For his Reuben creation, he transformed a classic by playing around with ingredients and presentation. “The potato pancake enhances the other ingredients and provides a nice crunch in place of a bun,” says Chef Steve. “This Reuben variation is my favorite.”
