Plínio Nunes Viana Júnior – BRAZIL Global Chef

Chef Plínio Viana lives in the Brazilian state of Minas Gerais, which is celebrated internationally for its cheeses, spices, sweets, meats, grains and the unique flavors of its local dishes. Chef Viana serves as a Gastronomic Consultant, creating dishes and menu innovations for Sodexo locations throughout Brazil.

With an MBA in Hotel Management, he’s managed industrial and commercial kitchens and has trained chefs and cooks to prepare and serve events with up to 10,000 guests. He’s developed and planned menus for international buffets, brunch, happy hours, themed parties and dinners, and other special occasions. Chef Viana has managed large-scale dessert production and has designed buffets and improved culinary presentation for guests.

Chef Viana conducts regional workshops for Sodexo to teach new and creative dishes and looks for innovative ways to share the flavors of Brazil’s many regions.
