“When I create new dishes, I always have an idea of what it will look like and how it will taste,” says Chef Richard Sandoval. His interest in cooking developed early in his life, inspired by his grandmother’s cooking, and his interest evolved into a passion when he started working in his father’s restaurants in Mexico. Richard travels around the world and is intrigued by the different ingredients and cooking techniques he experiences. “I take a lot of notes,” he says. “My new dishes start with a good idea and a plan.”
