Chef Steven Laybourn is a Sodexo Catering Manager at Australia’s largest mining camp, where he leads a team that serves 2,000 guests daily. He focuses on simple, elegant dishes and says he became a chef because he loves food! Chef Laybourn began his culinary career in a variety of cafés, bistros and large-capacity restaurants and hotels around Perth, a sunny city on Australia’s western coast. After completing a four-year culinary apprenticeship, he served as sous chef and head chef in lively bars and bistros and then found his calling as a chef at remote mining sites. For the past 10 years, he’s worked in and managed kitchens at several mining villages in Western Australia. Chef Laybourn joined Sodexo in 2011 and says the best part of his day is working with his team to create meals that guests enjoy.
