Prepare pancake batter according to package directions.
Quinoa Cooked in Orange Juice: Place orange juice in sauce pan. Bring to boil. Add quinoa. Stir to combine. Return to boil. Cover. Reduce heat and simmer for 15 minutes or until liquid is fully absorbed and quinoa is cooked and tender. Let quinoa set for 5 minutes. Fluff with fork.
In small bowl, combine diced apples with cinnamon and brown sugar.
Fold Quinoa Cooked in Orange Juice and apple mixture into pancake batter. Mix well.
Preheat grill to 350˚F. Place ½ cup quinoa pancake batter on grill. Cook for 2 to 3 minutes on each side or until golden brown.
Pancake Build: Place 2 pancakes on plate, top with 1 tablespoon maple syrup and a dollop of whipped topping.
