Bacon Blueberry Pancakes

For Service: In a bowl add 1 cup bacon and 1 cup blueberries to pancake batter. Fold into batter gently. Preheat griddle to 375 degree F. Coat hot griddle with vegetable oil spray. Ladle 1/2 cup pancake batter on to griddle. Cook 1 to 2 minutes or until air pockets form on top of batter. Gently flip pancakes. Cook for another 1 to 2 minutes or until lightly golden. Place pancakes on plate. Top with 1 tablespoon bacon and 1 tablespoon blueberries. Serve 2 pancakes with 2 tablespoons blueberry syrup.
