1 pound boniato, peeled and medium dice (can substitute Yukon Gold potatoes)
½ cup heavy cream
1/2 cup fresh ginger, peeled and roughly chopped
2 cloves garlic, peeled and roughly
2 tablespoons butter
1/4 teaspoon salt
1⁄8 teaspoon white pepper
½ cup green onion, thinly sliced on angle
Bring large pot of salted water to a boil over high heat. Add boniato and cook until tender – approximately 15-18 minutes. Drain. (Can also be cooked in a steamer until tender – approximately 15-18 minutes).
While the boniato is cooking, bring heavy cream, ginger, and garlic to a simmer in a small saucepan over medium heat. Simmer for 5 minutes and remove from heat. Reserve.
Place the boniato in a large mixing bowl. Add the cream mixture, butter, salt, and pepper and roughly mash with a potato masher leaving some chunks.
