Directions:

1. Burger Seasoning: Combine salt and black pepper in a mixing bowl. Season burgers with seasoning mixture on both sides. Grill burgers over medium heat 2 minutes per side until cooked through and temperature reaches 155˚F. Mix well.
2. Beef Brisket: Place beef brisket in a pan. Cover with foil. Preheat oven to 400°F. Heat beef brisket for 20 to 30 minutes.
3. Barbecue Slaw: In a sauce pan, combine apple cider vinegar, sugar, celery seed, mustard seed, a dash of salt and a dash of pepper for dressing. Bring to a boil. Reduce heat and simmer for 2 minutes. Stir in pickle spears. Bring to a boil. Remove from heat. Whisk in Dijon mustard. Let cool. Combine cabbage, carrots, thinly sliced green onions and dressing. Toss to evenly coat. Keep refrigerated until ready to use.
4. Garlic Aioli: Using a sheet tray, toss garlic with a dash of olive oil and a dash of salt. Preheat oven to 250°F. Roast garlic for 40 to 45 minutes. Let cool. Once cooled, mince roasted garlic. In a mixing bowl, combine roasted garlic, mayonnaise, chopped parsley, lemon juice and black pepper. Mix well. Keep refrigerated until ready to use.
5. Top burger with 1 ounce smoked Gouda cheese. Allow cheese to melt.
6. Sandwich Build: Place cheeseburger on the bottom of the hamburger bun. Top with 1 ounce Beef Brisket, 2 tablespoons Barbecue Slaw and 2 tomato slices. Spread 1 tablespoon Garlic Aaioli on inside top of bun. Place top of bun on burger.
