Chorizo Bacon Jam Burger with Chipotle Chips

Bacon Jam
6 oz raw bacon
1/3 cup minced red onion
1 clove minced garlic
4 teaspoons sherry vinegar
¼ teaspoon chili powder
1/8 teaspoon ground ginger
1/8 teaspoon ground mustard
1 tablespoon pancake syrup or maple syrup
2 ½ teaspoons light brown sugar
Chipotle Mayo (makes 1 cup)
1 cup low calorie, no cholesterol mayonnaise
1 tablespoon lime juice
1 tablespoon cilantro, washed, dried, and chopped
1 tablespoon chopped canned chipotles in adobo sauce
Chipotle Dusted Deli Chips
8 oz lightly salted or no salt added potato chips OR 10 oz frozen ready-to-cook potato chips
Nonstick pan spray (optional)
3/8 teaspoon chipotle chili powder
1/8 teaspoon Kosher salt

2 cloves garlic, minced
1 tablespoon chili powder
1 tablespoon paprika
1 tablespoon ground cumin
1 tablespoon dried oregano
¼ teaspoon ground cinnamon
½ teaspoon Kosher salt
¼ cup white vinegar
1 pound 80/20 ground pork
Chorizo Bacon Jam Burger
4 hamburger buns
4 Chorizo Burger Patties
½ cup Bacon Jam
1 fresh avocado, sliced into 16- ¼ inch slices
4 oz fresh Roma tomato, or 1-2 tomatoes, cut into 8- ¼ inch slices
2 cups arugula, washed and patted dry
¼ cup Chipotle Mayonnaise
To Prepare Bacon Jam
Preheat conventional oven to 325 degrees F (300 degrees F convection oven). Arrange bacon on sheet pans. Cook for 10-12 minutes (8-10 minutes convection) or until lightly browned; minimum internal temperature should be at least 158 degrees F with an instant-read thermometer. Transfer cooked bacon to a rack, or plate lined with paper towels, to drain off fat. Roughly chop into 1” pieces once drained and cool enough to handle. Reserve 1/2 teaspoon bacon fat for cooking. Heat reserved bacon fat in large skillet over medium heat. Add onions and garlic. Sauté for 5 minutes or until translucent. Add chili powder, ground ginger, and dry mustard. Stir and cook for 1 additional minute. Increase heat to high. Stir in vinegar, pancake syrup, and brown sugar. Bring to a boil. Add bacon. Reduce heat to medium and simmer for 5-7 minutes or until thick and syrupy. Let cool for 15 minutes. Transfer to a food processor. Pulse until mixture has the consistency of a chunky jam. Cover and place in the refrigerator to chill until ready to use. This will make ½ cup.
To Prepare Chipotle Mayonnaise
In a bowl, combine all ingredients. Mix well. Cover and place in the refrigerator until ready to use.
To Prepare Chipotle Dusted Deli Chips:
Prepare frozen potato chips according to manufacturer’s instructions. Drain well on a rack, or plate lined with paper towels, if needed. Place hot cooked chips or store-bought chips in a large bowl and toss with chipotle chili powder and salt.
To Prepare Chorizo Burger Patty
In a stainless steel bowl, combine minced garlic, spices, salt, and vinegar. Mix well. Add ground pork to spice mixture. Mix until well-blended. Form pork mixture into 4 oz. patties. Preheat griddle to 350 degrees F, or heat a large pan over medium heat and spray with nonstick coating. Place patties on griddle or pan. Flatten patties to approximately 5-inch diameter and 1/2 inch thick. Cook for 2 to 3 minutes on each side or until juices run clear; minimum internal temperature should be at least 158 degrees F with an instant-read thermometer.
To Assemble Chorizo Bacon Jam Burger
Toast buns in toaster oven or on a dry skillet until golden. Place burger on heel of bun. Place the following ingredients in order on top of patty:
– 2 Tbsp bacon jam
– 4 slices avocado
– 2 slices tomato
– 1/2 cup arugula
Spread 1 Tbsp chipotle mayonnaise on inside crown of bun. Place crown of bun on sandwich to close. Enjoy with Chipotle Dusted Deli Chips!
TIPS:
– Store unused canned chipotles in the refrigerator for up to 2 weeks or freeze in small amounts on a lined pan and then transfer to a zip-top bag for later use.
– For a different flavor, try ancho or chipotle chili powder instead of regular chili powder.
– Add cilantro to the top of your burger for extra flavor and crunch!
