Roasted Tomatoes:
1 ½ teaspoons olive oil
½ teaspoon balsamic vinegar
½ teaspoon peeled and finely chopped fresh garlic cloves
½ teaspoon finely chopped fresh thyme leaves
½ teaspoon Kosher salt
1/16 teaspoon ground black pepper
2 medium plum tomatoes, sliced
Old Bay French Fries:
1-pound store-bought French Fries
Oil for deep fat frying
1 Tablespoon Old Bay seasoning
Crispy Cod Sandwich:
¼ cup all-purpose flour
½ teaspoon Kosher salt
½ teaspoon ground white pepper
3 Tablespoons egg whites
3 Tablespoons water
2 cups panko
1-pound cod, cut into 4 equal size pieces
Oil for deep fat frying
4 brioche buns, sliced and toasted
