Grilled Chicken Melt

Grilled chicken breast topped with cheddar cheese, grilled onions and dill pickle chips on Texas toast, grilled to perfection

Ingredients:

6 chicken breasts
12 slices cheddar cheese
24 pickle chips
6 tablespoons margarine or butter
12 slices Texas toast
¾ cup onions, diced ¼ inch
2 tablespoons olive oil
1½ teaspoons garlic
1½ teaspoons salt
¾ teaspoon pepper

Directions:

Sautéed Onions: Peel and dice onions. Heat 1 teaspoon oil in a sauté pan or skillet on medium heat. Add onions and sauté until softened. Hold hot until ready to use.
Marinated Chicken Breast: Gently pound chicken to an even thickness. Combine oil, garlic, salt and pepper. Mix well. Pour over chicken turning to evenly coat. Place chicken on grill over medium high heat. Grill for 4 to 5 minutes on each side. Hold hot until ready to use.
Sandwich Build: Lay bread on flat work surface. Place 1 slice of cheddar cheese on bottom slice of bread. Place 1 grilled chicken breast on top of cheese. Place 1 slice of cheddar cheese on top of chicken. Place 2 tablespoons grilled onions on top of cheese. Place 3 to 4 pickle chips on top of grilled onions. Close sandwich with top slice of bread. Brush ½ tablespoon margarine on each side of sandwich. Place sandwich on a 300˚F griddle. Grill until both sides of sandwich are golden brown and cheese is melted. Cut in half diagonally and serve.
