Grilled Pimento Cheese and Green Tomato Sandwich with Sweet Potato Fries

Pimento Cheese: Place softened cream cheese and mayonnaise in a mixer bowl, mix on low speed until well blended. Add garlic, cayenne pepper, salt, and pimentos. Mix until incorporated. Fold in cheddar cheese and Monterey jack cheese, Mix on low speed until well blended.
For Service: On a preheated 300 degree flat top grill. Place 1 slice of bread on the flat top grill. Evenly spread with pimento cheese and 3 slices green tomato, Close sandwich with the second slice of bread. Using a spatula, spread 1 tablespoon first listed mayonnaise on top slice of bread. Place sandwich, mayonnaise side down, on grill. Spread 1 tablespoon second listed mayonnaise on remaining slice of bread. Grill for 2 minutes or until golden brown. Flip sandwich and cook an additional 2 minutes or until second side is golden brown, cheese is melted.
