Dry Rub 4 tablespoons brown sugar
1 teaspoon salt
1 teaspoon ground black pepper
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon chili powder
Ribs 3-4 pounds country-style pork ribs, cut into individual rib bones
¼ cup mustard
2 cups beef stock
1 cup beer*
1 large, sweet onion, quartered
*if not using beer, then add another cup of beef stock to the recipe.

Combine the dry rub ingredients together in a small bowl.
Brush the ribs with mustard and then coat with the dry rub.
Place the ribs in a slow cooker. Pour stock and beer over the meat. Add the onion quarters. Cover the slow cooker and cook on low for 6 hours. Check to see if meat easily comes off bone, if not continue to cook on low up until another two hours.
Remove from the slow cooker and transfer to a serving platter. Serve with or without your favorite barbeque sauce.
