1 1/4 pounds 80/20 ground beef
1 teaspoon Italian seasoning
1 teaspoon garlic powder
1 cup very thinly sliced yellow onions
3 thin slices of part-skim mozzarella cheese (about 3/4 oz each)
24 slices pepperoni
Spicy Sriracha Mayo
3 tablespoons mayonnaise
1 1/2 teaspoons sriracha-style sauce
1 1/2 teaspoons Dijon mustard

4 toasted brioche buns
1/4 cup Spicy Sriracha Mayo

1/2 cup pizza sauce
12 banana pepper rings, drained

Nutritional InformationTo Prepare Double Onion Smash Burger Patties:
Preheat a skillet over medium-high heat or a griddle to 375 degrees Fahrenheit. Divide the beef into 8 (1/3-cup) balls and place them on the hot griddle. Place the burger balls on the heated griddle or skillet and smash them with a spatula until they are no more than 1/2 inch thick. Season each patty with 1/8 teaspoon Italian seasoning and 1/8 teaspoon garlic powder. Place 2 tablespoons of onions on top of the uncooked side of each patty. Cook the patties for 3 to 3 1/2 minutes until the juice begins to run, then turn them. Cook for 1 1/2 to 2 minutes on the second side or until the onions are browned and the burger reaches a minimum internal temperature of 158 degrees Fahrenheit. Place one slice of mozzarella cheese on each patty and allow the cheese to melt. Place the pepperoni on the griddle and heat it through for 10 to 15 seconds.
To Prepare Spicy Sriracha Mayo:
Whisk all ingredients together in a small bowl until well combined. Cover and keep refrigerated until ready to use.
To Assemble Pepperoni Pizza Smash Burgers:
Spread 1 1/2 teaspoons of sriracha mayo on the bun’s heel and crown. Place one patty on the heel of the bun. Place the following ingredients in order on top of the burger:
– 1 tablespoon pizza sauce
– 3 slices banana pepper rings
– 1 burger patty
– 1 tablespoon pizza sauce
– 3 slices banana pepper rings.
Place the crown of the bun on top and enjoy immediately!
