For Service: In a bowl add cocoa powder, 1/2 cup chocolate chips and red food coloring to pancake batter. Mix well. Preheat griddle to 375 degrees F. Ladle 1/2 cup pancake batter on griddle. Cook for 1 to 2 minutes or until air pockets form on top. Gently flip pancakes. Cook another 1 to 2 minutes or until lightly golden. Place pancakes on plate. Top with 1 tablespoon chocolate chips, 2 tablespoons maple syrup and 2 tablespoons whipped cream cheese.
