Potato Pancakes:
1-pound store-bought frozen shredded hash brown potatoes, thawed
½ cup eggs, about 2 large eggs
2 Tablespoons and 2 teaspoons all-purpose flour
¼ cup finely chopped yellow onions
1 teaspoon Kosher salt
½ teaspoon ground white pepper
¼ cup canola oil
Smoked Turkey Reuben:
¾ cup and 2 Tablespoons drained sauerkraut
¼ cup store-bought thousand island dressing
8 slices sourdough bread
8 (1/2 ounce) slices Swiss cheese
12 ounces thinly sliced hickory smoked deli turkey breast
