Spicy Peanut and Banana Soup

Heat the oil in a large soup pot. Add the onion and cook until softened. Add the garlic and cook for about 3 minutes. Add the cayenne and cook for 1 minute longer. Stir in the red peppers, carrots, and potatoes. Add the celery and cook for another 4 minutes, stirring occasionally. Add the vegetable stock and the peanut butter and stir to incorporate. Add the corn and stir until thoroughly combined. Season the soup with pepper.
Bring to a simmer for 30 minutes or until all of the vegetables are tender to the bite.
Stir in the diced bananas.
Portion the soup in each of 4 soup bowls. Garnish with 2 banana chips, chives, and some chopped roasted peanuts.
