Three Cheese Gratin Potatoes

Preheat oven to 350°F. Prepare a 9 x 13 inch baking dish with pan spray.
Bring cream, salt, and pepper to a simmer in a small saucepan over medium-low heat. Reserve.
Line the bottom of the baking dish with a fourth of the potatoes. Cover with 1 cup of the Parmesan cheese. Add another fourth of the potatoes to make another layer. Cover with the cheddar cheese. Add another fourth of the potatoes to make another layer and cover with the Monterey Jack cheese. Add the last layer of the potatoes and pour seasoned cream over potatoes. Cover with foil and bake until cream has thickened and potatoes are tender – approximately 45 minutes.
Remove foil. Top with remaining 1⁄2 cup Parmesan cheese. Bake until lightly browned – approximately 15 more minutes. Allow gratin to rest for at least 5 minutes before cutting.
