8 tablespoons smashed avocado
8 tablespoons pickled red onions, jar
8 slices Monterey jack cheese
8 slices cheddar cheese
3 fresh jalapenos, sliced very thin
1 French baguette, 24 inch length, cut into four equal pieces
Smashed Avocado 1 large avocado, peeled and chopped
2 teaspoons lemon juice
1/8 teaspoon ground pepper
1/8 teaspoon salt

Smashed Avocado: In a bowl combine all ingredients and mash with a fork until smooth.
For Service: Split baguette lengthwise leaving bread hinged. Spread 2 tablespoons smashed avocado on inside bottom of baguette. Place 2 slices Monterey jack cheese on top of avocado. Place 2 slices cheddar cheese on top of Monterey jack cheese. Place 2 tablespoons pickled red onions on top of cheese. Place 6 slices jalapenos on top of onion. Close sandwich.
