Bacon BBQ Meatloaf Sandwich

Coriander spiced meatloaf topped with candied bacon, sautéed onions and peppers and bbq sauce on a toasted seeded hamburger bun.

Ingredients:

1 pound coriander meatloaf
6 slices crisp candy bacon slices
1/2 cup sautéed peppers and onions
4 seeded hamburger buns, sliced
1/4 cup bbq sauce

Coriander Meatloaf
2-1/2 teaspoons canola oil
1/4 cup yellow onion, diced 1/4 inch
1-1/8 teaspoon whole clove garlic, peeled, chopped
1 pound fresh ground beef
1-1/2 tablespoons seasoned bread crumbs, dry
2 medium eggs
2-1/2 teaspoon ground coriander
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper

Crisp Candy Bacon
6 slices bacon, cut in half
1 teaspoon light brown sugar

Sauteed Peppers and Onions
1 teaspoon canola oil
1/4 cup yellow onion, sliced 1/4 inch
1/4 cup green bell peppers
1 tablespoon red bell pepper

Directions:

Coriander Meatloaf: Heat oil in skillet, sauté onions and garlic until onions are translucent, approximately 5 minutes. Combine onion mixture with ground beef, bread crumbs, eggs, coriander, salt and pepper, mix well to combine. Line a loaf pan with parchment paper, place mixture in loaf pan. Shape evenly in pan. Bake in a preheated 325 degree oven for 35 to 40 minutes. Remove meatloaf from oven and let stand for 15 to 20 minutes before slicing. Cut into 4 equal pieces.
Crisp Candy Bacon: Place raw bacon on a parchment paper lined sheet pan. Evenly sprinkle brown sugar on bacon slices. Bake in a 375 degree oven for 12 to 15 minutes or until brown sugar carmelized. Gently remove bacon from sheet pan using tongs while warm.
Sauteed Peppers and Onions: Add oil in saute pan, place over medium heat. Add onions and peppers. Saute until softened.
For Service: Toast cut sides of seeded hamburger buns on a flat top grill for 1 to 2 minutes or until golden brown. Place sliced meatloaf on a flat top grill, cook 2 minutes, flip and cook 2 minutes more. Spread 1tablespoon barbecue sauce on heel of toasted seed bun, top with slice of meatloaf, 3 half slices of candied bacon and 2 tablespoons sautéed peppers and onions. Place crown on sandwich to close.
