Glazed Salmon Fillets 4 (4ounce) salmon fillets
1/4 cup canola oil
1/2 teaspoon kosher salt
1/2 cup ground black pepper
1/2 cup citrus chipotle BBQ sauce
Smoky Summer Succotash 1 1/2 teaspoons canola oil
1/4 cup bacon, raw, diced 1/4 inch
1 tablespoon red onion, diced 1/4 inch
1 tablespoon red pepper, diced 1/4 inch
1/2 cup fresh corn kernels off the cob
1 tablespoon jalapeno peppers, seeded, diced 1/4 inch
1/2 cup garbanzo beans (chickpeas) canned, rinsed and drained
1/2 cup fava beans, frozen, thawed
1/2 teaspoon BBQ seasoning
1/2 cup heavy whipping cream
1 tablespoon parsley leaves, minced
BBQ Glazed Salmon over Smoky Summer Succotash

Glazed Salmon Fillets: Preheat grill to medium high heat. Coat salmon fillet and salt and pepper. Place salmon on heated grill, and cook 3 to 4 minutes on each side. Top with 2 tablespoons BBQ sauce.
Smokey Summer Succotash: Heat sauté pan over medium heat. Add oil and bacon, cook for 6 minutes, stirring often. Add red onion, red pepper, corn and jalapeno peppers. Saute for another 4 to 5 minutes. Add garbanzo beans, fava beans, BBQ seasoning and heavy cream, Mix well. Cook until cream starts to reduce and mixture starts to thicken.
For Service: Place 1/2 cup smoky summer succotash in center of plate. Top with salmon fillet.
