Taco Beef Filling: Cook ground beef in a sauce pan until thoroughly browned and no pink. Drain excess fat. Stir in taco seasoning, 1 cup water and tomato paste. Simmer for 3 to 4 minutes. Hold hot until ready to use.
Beef Taco Pie Build: Place unbaked pie shells on counter. Spread 2 cups refried beans in the bottom of each pie shell. Place 3 cups cooked taco filling on top of refried beans. Spread meat evenly over beans. Spread 1 cup shredded cheddar Jack cheese over taco meat.
Place taco pie in a 375˚F oven. Bake for 25 minutes or until crust is golden brown.
Cut each pie into 6 equal pieces.
Taco Pie Build: Place 1 wedge taco pie on plate. Top with 1 ounce shredded lettuce and ½ ounce diced tomato. Place 1 tablespoon sour cream on top of tomatoes.
