Confit Tomatoes

Diced tomatoes flavored with garlic and thyme.

1⁄4 cup olive oil
1⁄4 cup garlic, garlic
1 14-ounce can diced tomatoes, drained
1 teaspoons chopped fresh thyme
1 teaspoons salt
½ teaspoon pepper

Vegetarian

Heat oil in sauté pan over medium heat. Add garlic and cook until golden – approximately 3-4 minutes. Add tomatoes and thyme. Cook slowly until liquid from tomatoes evaporates – approximately 10-15 minutes. Season with salt and pepper.
