2 Tablespoons seeded and finely chopped jalapeno peppers

3 Tablespoons Tropical BBQ sauce, prepared
Caribbean Apple Jicama Slaw
¼ cup mayonnaise
1 teaspoon Dijon mustard
¼ teaspoon sugar
½ teaspoon red hot cayenne pepper sauce
½ teaspoon Kosher salt
1/8 teaspoon ground black pepper
2 cups shredded green cabbage
¼ cup shredded red cabbage
¼ cup shredded or matchstick carrots
¼ cup jicama sliced into thin sticks
¼ red pepper, seeded and sliced into thin sticks
¼ red delicious apple, sliced into thin sticks
2 ½ Tablespoons chopped cilantro
1 ½ teaspoons finely chopped jalapeno peppers
Tropical Pulled Pork
12 ounces pulled Bbq pork, chopped
1/3 cup tropical BBQ sauce
Bajan Mac and Cheese
1 cup raw elbow macaroni
Water for boiling
2 teaspoons butter
1 Tablespoon finely chopped onion
2 teaspoons finely chopped habanero peppers
2 teaspoons flour
2/3 cup heavy whipping cream
1/3 cup shredded Cheddar cheese
1 ½ Tablespoons ketchup
2 ¼ teaspoons red hot cayenne pepper sauce
¼ teaspoon granulated garlic
¼ teaspoon ground mustard
1/8 teaspoon cayenne pepper
One pinch ground black pepper
1/8 teaspoon Kosher salt

Nutritional InformationTo Prepare Tropical BBQ Sauce:
In a food processor or blender, process pineapple until smooth. Heat a saucepan on medium heat and add pineapple puree, Tropical BBQ sauce, molasses, curry powder, and cumin. Mix well and heat for 3 to 4 minutes. Remove from heat and allow to cool. Cover and place in the refrigerator until ready to use.
To Prepare Creamy Tropical Jalapeño BBQ Sauce:
In a bowl, combine all ingredients until well-blended. Cover and place in the refrigerator until ready to use.
To Prepare Caribbean Apple Jicama Slaw:
Combine mayonnaise, mustard, sugar, hot sauce, salt, and black pepper in a bowl. Mix well. Add shredded green and red cabbage, carrots, jicama, red pepper, apple, cilantro, and jalapeño peppers. Mix until vegetables are coated evenly. Cover and place in the refrigerator until ready to use.
To Prepare Tropical Pulled Pork:
In a bowl, combine pulled pork and Tropical BBQ sauce. Mix well. Place pork on a sauté pan on medium-high heat. Heat pork until warm. Serve warm.
To Prepare Bajan Mac and Cheese:
Cook macaroni according to the manufacturer’s direction. Drain well. While pasta is cooking, melt butter over medium-high heat in a pot. Add onion and peppers and sauté for 2 to 3 minutes. Add flour to make a roux. Stir with a whisk and cook for 2 minutes or until flour starts to foam. Add heavy cream and cheese to the flour mixture. Whip with a whisk until smooth. Add ketchup, hot sauce, granulated garlic, dry mustard, cayenne peppers, black pepper, and salt. Whisk until mixed. Simmer for 2 minutes. Add cooked macaroni and mix until evenly coated with sauce.
To Plate Jalapeño Pulled Pork Pasta Bowl:
In order, place the following ingredients in a serving bowl:
– ½ cup Bajan mac & cheese
– ½ cup tropical pulled pork
– 1/4 cup tropical BBQ sauce
– ¾ cup slaw Caribbean Apple Slaw
