This no-bake recipe makes an impressive presentation when served in stemmed glasses but takes only minutes to make. And even better, pop it in the refrigerator an hour before dinner and dessert is done.
For the Key lime filling: Using an electric mixer, mix cream cheese and sugar together until well blended – approximately 3 minutes. Add the lime juice and mix until well incorporated.
Using an electric mixer, whip the heavy cream to stiff peaks. Remove 3⁄4 cup of whipped cream for garnish. Fold the remaining whipped cream and the lime zest into the cream cheese mixture. Store covered in the refrigerator for an hour to firm up.
For the parfait: Divide the filling between 12 small, stemmed glasses. Top each glass with peaches, preserves, almonds, and whipped cream. Serve.
