Malt Vinegar Slaw:
3 ½ cups shredded green cabbage
1 ¼ cups shredded red cabbage
¼ cup peeled and shredded carrots
1 ½ teaspoons granulated sugar
1 ½ teaspoons Kosher salt
¾ teaspoon celery seed
¼ cup and 2 Tablespoons malt vinegar

1-pound raw cod loin, cut into 4 equal-size pieces
1 Tablespoon and 1 teaspoon Cajun seasoning
1 teaspoon Kosher salt
1 teaspoon ground black pepper
¼ cup lemon juice
1 Tablespoon and 1 teaspoon finely chopped fresh Italian parsley
¼ cup butter
4 (4-inch) multi-grain hamburger buns
4 leaves of green lettuce
8 slices of tomato
4 slices of red onion
