New England Shrimp Salad ¾ pound peeled, deveined shrimp 71 to 90 count
3 tablespoons celery, diced ¼ inch
¼ cup mayonnaise
2 teaspoons lemon juice
1 teaspoon Old Bay Seasoning
1 teaspoon parsley leaves, chopped
New England Shrimp Salad: Thaw shrimp completely. Remove tails. Boil shrimp for 2 to 3 minutes until shrimp turns pink. Cool. Blanch celery in boiling water for 1 minute. Cool. In a mixing bowl, combine celery, mayonnaise, lemon juice, Old Bay Seasoning and parsley. Mix well. Add chilled, cooked shrimp and combine.
Sandwich Build: Open hot dog bun. Arrange ¼ cup shredded lettuce evenly on bun. Evenly place ½ cup New England Shrimp Salad on top of shredded lettuce.
