Spicy Buffalo Blue Cheese Dressing
3 tablespoons blue cheese dressing
1 tablespoon hot sauce
Spicy Buffalo Chicken
1/4 cup Buffalo-style hot pepper sauce
1/4 cup canola oil
4 4-ounce boneless, skinless chicken breasts
18 ounces frozen pre-cut 3/8-inch French fries
Oil for frying
Spicy Buffalo Chicken Sandwich
8 1-ounce slices of Italian bread
1/4 cup spicy Buffalo blue cheese dressing
8 1/2-ounce slices of mild cheddar cheese
4 spicy Buffalo chicken breasts
16 slices canned jalapeno peppers (1 to 2 2-ounce cans, drained)
1/4 cup softened butter
4 4-ounce servings of French fries
Eggs, Gluten, Milk, Sesame, Soy, Wheat
To Prepare Spicy Buffalo Blue Cheese Dressing:
In a mixing bowl, combine all ingredients. Mix well. Cover and place in the refrigerator until ready to use.
To Prepare Spicy Buffalo Chicken
In a medium bowl, combine hot sauce and oil. Mix well. Butterfly the chicken breasts to an even thickness by carefully slicing the chicken breast in half along the long side of the breast until almost cut through. The finished piece of chicken should look like an open book. Place the chicken breasts in a hot sauce mixture, ensuring they are completely covered. Cover and keep refrigerated for at least 4 hours, up to 24 hours. Discard any excess marinade. When ready to cook, heat a broiler or grill on high heat. Spray the chicken with nonstick pan spray (not listed). Place the chicken on a preheated broiler or grill and cook on both sides for 2 to 3 minutes until marked and cooked through with an internal temperature of at least 165 degrees Fahrenheit. Keep warm until ready to eat, or cool quickly and keep covered in the refrigerator for up to 3 days.
To Prepare French Fries:
For deep-fat frying, heat oil to 350 degrees Fahrenheit and cook potatoes for 2 1/2 to 3 minutes until golden brown. Drain well and keep warm until ready to eat. To oven fry or bake, follow the manufacturer’s instructions and bake until golden brown and crispy. Keep warm until ready to eat.
To Assemble the Spicy Buffalo Chicken Sandwich
Lay out four Italian bread slices and assemble the sandwiches in the following order:
– 1 tablespoon spicy buffalo blue cheese dressing
– 1 slice cheddar cheese
– 1 spicy Buffalo chicken breast
– 4 slices jalapeno peppers
– 1 slice of cheddar cheese.
Top each sandwich with a second slice of Italian bread.
When ready to eat, preheat a skillet over medium heat or an electric griddle to 350 degrees Fahrenheit. Spread 1/2 tablespoon of softened butter on each side of the sandwich. Griddle the sandwich on both sides for 2 to 3 minutes until golden brown and the cheese has melted. If cooking a pre-assembled & refrigerated sandwich, cook for 1 to 2 minutes longer on each side until the golden brown and the cheese has melted, and the sandwich reaches a minimum temperature of 165 degrees Fahrenheit. Enjoy immediately with French fries!
